Here are a few thing that you can do to get a 3 star rating:
Tatoonie 1-1
Fire your 1st bird ( Red Luke Skywalker) at the horizontal piece of wood closes to you. Everything should fall.
Death Star 2-1
Shoot the blue bird ( splitting ) around the bottom outer edge of the planet.
Before you hit the glass split into 3 by doing this there should be enough force to take out the rest of the pigs.
Path of the Jedi J-1
Aim for the second level wall behind the piggy.
When you land use the light saber and wipe out the supports around it, that will bring down everything else.
